October 13th: Comfort foods and comfort reads: now that the weather is getting cooler, share some of yours.
Oh, it got cold here last night – lows in the 40s and today’s high was only 54F. BRRRR… When this happens I do have a few comfort foods I turn to.
- Slow-cooked pulled pork. My family loves it. I usually use some garlic, onion, salt, and cumin and let it cook all day. Then I shred it and serve a multitude of ways: tacos, over rice, sliders, or easy enchiladas.
- Soup. We have a homemade soup place down the road and they rotate their menu weekly. I LOVE their butternut bisque this time of year. I also like to make a sausage, spinach, and tortellini soup. And a Mexican chicken soup… Soup is so yummy on a cool day.
- Lasagna. All that gooey cheese and noodles. I love serving it with a thick crusty bread. Just yum!
As for comfort reads… I really don’t re-read books much any more. But I do love a light holiday-themed book starting this time of year. I don’t want too much drama. Humor is good. A mystery is fun. Nothing too deep or complex.
